Here is a great organic kale salad recipe that is sure to please and bring a smile to everyone’s face. This salad is full of nutrients, quick, simple, and really tasty! Taro root is smooth and creamy in texture and has a low glycemic index making it great for those watching their blood sugar… much better than potatoes for blood sugar control.
This salad is made with three different types of kale… but any kind of kale will do.
This recipe makes 2 large salads
12 - Large Organic Kale leaves chopped.
(It could be flat leaf or curly kale it doesn’t matter)
1 - Large Organic Avocado chopped.
2 - Medium Organic Taro Roots - Boiled and Chopped
(Organic potato can also be used instead of taro)
10 - Oz of Organic Cooked Garbanzo Beans
2 1/2 - Tablespoons of Organic Vegan Mayo
2 - Cloves of Organic Garlic Minced
1 - Small Organic Tomato Chopped
Salt and pepper to taste
(Optional) - 2 Organic Veggie Patties - Chopped for added texture heartiness.
(Optional) - Dash of Red Pepper Flakes
Mix all the ingredients together and place on a plate and then garnish with the tomato pieces on top. - Enjoy!
Taro Root is a low glycemic index food that means it breaks down into glucose in the liver very slowly thus making it great for weight loss and for lowering blood sugar too making great for diabetics. And it also works wonders for those with hypoglycemia because it gives long lasting energy for a long period of time. And because it gives long lasting energy we don’t feel hungry… thus we lose weight. Taro Root contains lots of fiber that helps us feel full and also helps with weight loss. And that fiber also creates a nice home for growing probiotic bacteria.
Taro Root contains lots of vitamins A, C, B, and E vitamins as well as lots of trace minerals such as copper, magnesium, calcium, iron, selenium, manganese, zinc, potassium, and beta-carotene and cryptoxanthin which are great antioxidants helping to protect us from disease and slow the aging process… and a good amount of protein too! In fact Taro Root is more nutritious than potatoes and it’s a gluten free. Taro Root is a cholesterol free and low in sodium, contains B vitamins important for boosting our immune system… and it’s a good low fat food. Taro root can be found at any good asian or world market.
Kale is full of lots of nutrients found in green leafy veggies that will alkalize our bodies… and it’s full of Vitamins, A (more than 500% of your RDA of Vitamin A), C (More than 200%), and B6 and K (About 700%) and also calcium, manganese, and potassium. Kale also contains iron for building up our red blood cells and preventing anemia and boosting vitality.
Plus kale has lots of lutein and zeaxathin that are great for preventing macular degeneration. And Kale boosts our immune system, promotes healthy blood clot formation, and Kale is also loaded with beta-carotene helping to prevent cancer and other diseases… and it’s also anti-inflammatory too!
Kale is part of the cabbage family, all of which contain colon cancer preventing nutrients… and kale boosts our metabolism and helps with weight loss.
Avocados are full of avocado Oil which is 70% monounsaturated making it just about the same as Olive Oil. Avocado Oil is antiseptic and boosts the immune system… and might end up in mouthwash according to new articles in health journals because it kills bacteria. And studies also show that Avocado Oil in small amounts is very good for treating gum disease. Avocado Oil increases HDL or good cholesterol significantly and lowers bad cholesterol too… plus studies showed that using Avocado helps us lose weight. Avocados contain large amounts of Omega 3 and 6 fatty acids that are great for protecting us from heart disease and strokes. And Avocado contains a lot of Vitamin’s A, D, & E… and antioxidants such as beta-carotene, which is great for boosting our immune system and making our blood vessels stronger and more flexible, and avocado is a great anti-inflammatory agent too!
And because avocados contain Vitamin E it reduces our chances of coming down with breast, colon, and prostate cancer. And when eating Avocados it makes our hair look great. And Avocados help our skin heal faster… and keeps our skin from developing wrinkles and age spots.
