“Organic Curried Garlic Eggplant with Peppers”

Here is a delightful dish that can be served over brown rice to create a wonderful meal. Full of the great health benefits of organic turmeric and garlic, and the powerful healing abilities of organic eggplant. This recipe only takes minutes and it’s hearty, delicious, and will warm the soul of anyone who loves eggplant. 


10 - Medium Organic Eggplant Sliced into Long Strips

2 - Large Organic Red Bell Peppers Sliced into Long Strips

16 - Cloves of Organic Garlic Minced

2 - Tablespoons of Organic Olive Oil

1 1/2 - Tablespoons of Curry Powder

2 - Teaspoons of Chili Powder

3 - Cups of Mustard Greens Chopped, or any other kind of greens that you like such as Kale, Collard Greens, or Turnip Greens  

4 - Cups of Low Sodium Organic Veggie Stock

Sweetener - Adding a little sweetness to this pungent dish makes it very tasty.  Adding a dash of stevia or a little honey works well… slowly add and check depending upon your taste. 

Salt and Pepper to Taste

Add the oil to a large frying pan and heat the pan on medium heat, and then add the onions and garlic and sauté until golden brown. Then add the eggplant strips and while constantly stirring allow it to cook down part way. Then add the curry powder, chili powder, and the red bell pepper strips. Now add the veggie stock and keep stirring and cook until all the eggplant is nice and soft. Next allow the whole pan cool a bit and add the chopped greens and salt and pepper and the stevia or honey. We don’t want to destroy all the goodness of the greens with too much heat. Mix well and serve over brown or white rice. 

This recipe makes about 10 medium servings, and it will keep in the frig for a full week. 

Health Benefits of Eggplant 

Eggplant contains a phytonutrient called Nasunin that’s found in the dark purple skin of eggplant, it’s one of the most powerful antioxidants around (And it is only found in Eggplant). Eggplant has a low glycemic index of 15… making it great for diabetics. Eggplant contains soroparone & scopoletin which are both compounds that relax and sooth the nervous system. Eggplant is very low in calories making it great for weight loss. And because it contains lots of fiber, it makes you feel full… thus you eat less. Also Eggplant contains lots of water to make your skin and hair look great.

Eggplant has little to no fats and it’s very low in carbs. But remember if you add lots of egg, oil, cheese and other fatting things to eggplant it’s no longer a low calorie food.

Because Eggplant contains lots of great antioxidants it also helps with inflammation such as arthritis, joint problems, and other inflammatory diseases.

Because Eggplant contains chlorogenic acid and 13 other powerful antioxidants that lower bad cholesterol or LDL cholesterol. In studies with rats given Eggplant juice their cholesterol went down drastically… and their arteries relaxed which lowered blood pressure. Eggplant is a good source of Vitamin K to prevent clotting… and thus prevent heart attacks.

Eggplant contains B Vitamins for vitality and good mood, potassium for water regulation and heart health, copper for anemia, manganese for bone health and fertility, calcium and phosphorus for strong bones. Plus Eggplant contains lots of great fiber to keep you regular, and promote growth of probiotic bacteria in your colon and boost your immune system. Iron is important for bodily function but too much iron can lead to higher cholesterol, cancer, and joint damage.
