“In todays world we have lots of choices when it comes to food and many of them are not healthy. But if we make a conscious choice to train ourselves to eat simply everything changes… and great health is a wonderful side effect of the whole process.”

It’s easy to get caught up in the world of fast food, highly processed food, overly spiced meals, high caloric meals, fattening foods, and very salty food. And when we start to partake of these food they become addictive and take over our lives. 

One person who was having problems with neuropathy came out and said she was addicted to sweets and salty food. And eating those foods fanned the fire of her disease to the point that her face, feet, legs, and arms were in constant pain. 

It’s important to learn to love food just as plain as it can be. To pull up a carrot wash it off and enjoy the freshness of a carrot that’s so fresh that it’s overwhelmingly full of flavor. Simple yet full of great fresh flavor and nutrition. 

Many people have no idea what fresh wholesome organic food tastes like. Because we go to the big box wholesale stores and buy large batches of lettuce that come all the way from South America. Or we pick up 6 to 10 large red bell peppers that shipped all the way from the Netherlands. By the time these foods arrive at our markets half or more of the fresh food flavor has disappeared. Thus we have no idea what fresh and simple food is all about. 

Some people equate simple with boring… but that’s really not the case. It’s about training our taste buds to get back to basics and enjoying really simple food. 

It’s very interesting that if we take a group of grade school kids and teach them to garden they learn to love the taste of fresh food. In fact after a while they crave simple and healthy food. And for kids to be invited to participate in cooking these foods furthers their interest in simple healthy food. 

When we take food and spice it with lots of spices to the point that we don’t even taste the original food, we have lost the simple goodness of what food is all about. 

Going out into a field of organic tomatoes and picking a nice red juicy tomato right off the vine and taking that first bite is amazing. The flavor bursts onto our palate and opens up a whole new taste experience that many people have never experienced. 

Or to enjoy the simple and subtle flavors of organic arugula and land cress. Which in reality have amazingly different flavors that are bright, bold, and complex to the point of being able to write a whole essay on the flavors of these two simple greens. 

And when we take lots of salad dressing and drench our salad with powerful flavors we lose the bright subtle flavors of what salad is all about. It’s not that using a little salad dressing is not OK but to enjoy food in it’s most natural form is the most rewarding experience of all… and the healthiest. 

Most food is absolutely the freshest and full of flavor when we eat locally grown food that stays within 10 to 20 miles of our home. And to consume food that was pick fresh that morning also brings flavors to our palate that are not found in food that was picked 10 to 20 days or more ahead of time and shipped in cold container ships to our stores. 

Plus many of the live enzymes that are found in food disappear when they are stored and shipped long distances. Thus many of the life giving abilities of good food are lost and our bodies suffer because of that. 

We have a nose that can smell amazing aromas that are complex and subtle. We have tastes buds that can taste bright, light, and wonderful flavors. We have ears that can hear the snap of a fresh green bean. We have a sense of touch that can feel the wonderful texture of crips romaine lettuce. 

We have our eyes that can see a multitude of colors that are available to us when fresh food is right off the vine and vibrant. And all of these sensual pleasures play a part in the vitality of our mind, body, and spirit when we eat simple wholesome vital food. 

It’s very important to take the time to sit down and train ourselves to love simple food. It does not happen overnight or through the process of osmosis. It takes time to learn to enjoy simple, fresh, and extremely healthy food.
