Full of lots of antioxidants and nutrients that are very healing.
10 - Small Japanese Eggplant - Grilled with Old Bay Seasoning (low sodium) and Garlic Powder
2 - Large Tomatoes - Chopped and Seasoned with Just a Touch of Salt and Sweet Rice Wine Vinegar.
2 - Red Bell Peppers - Chopped and sprayed with just a touch of canola oil (just enough to make the seasoning stick) and seasoned with Salt Free Italian Seasoning
1 - Large Cucumber - Chopped
3 - Large Gluten Free - Whole Grain Crackers Crushed
1 - Cup of Almonds - Crushed
2 - Cups of Sunflower Sprouts - Used in the green mix base for the salad
6 - Cups of Mixed Greens - Use any kind that you like for the base for the salad
Season with a small amount of salt and pepper
And because this salad tastes great without dressing... just add a little sweet rice wine vinegar for the dressing. - You’ll Love It!
Arrange sprouts and green mix in a large bowl, then add your grilled eggplant in the middle and the rest of the ingredients around the eggplant. - Simple
You can make this salad very large for a party or small for one person.
