Wilted Luffa Leaf and Garlic Salad Recipe - Vegan

This great tasting Luffa Leaf and Garlic Salad is a Whole Foods/Plant Based Diet Recipe that’s full of wonderful nutrients that keep you healthy and bring vital energy to your body. 

At the same time Luffa grows like crazy and can be a source of free food when you need it most. 

Ingredients:

3 -  Cups of Large Luffa Leaves - Chopped - You can easily grow Luffa at home. 

3 - Cloves of Garlic - used more or less according to your taste

1 - Large Organic Tomato - Diced

1/2 - Cup of Veggie Stock

1/2 - Cup of Crushed Organic All Natural Almonds

Salt and Pepper to taste

Very Little Spray Oil for the bottom of the pan

(Optional) - You also could add capers if you like... would go great.

(Optional) - Honey and Mustard Dressing - Make this at home. 

Go out and collect your Luffa Leaves and gather up 3 cups, wash them and then chop them up into large pieces. 

Spray the bottom of your saute pan with oil (use sparingly) and then saute Luffa and garlic together and towards the end of the saute add the veggie stock. 

Take off heat and arrange on plate... and sprinkle with diced tomato and crushed almond pieces. 

Salt and Pepper to taste and you have a great tasting and healthy meal.

Luffa tastes a lot like mustard greens and has a peppery kind of taste... I love it! 

Could be for lunch or dinner. 

This salad is quick, simple, and good for you and makes use of greens that grow in your garden, and it will grow in a pot on your patio too. 

Luffa is great for liver problems and helps with jaundice and anemia. Plus the seeds can also be eaten too for healing the liver and thus should be saved. Contains a lot of calcium and phosphorus for strong bones, iron for treating anemia, B vitamins for health and vitality, Vitamin C which works together with the zinc in Luffa to stave off colds and flues. Luffa is lower in fat, high in fiber, and contains lots of anti-inflammatory agents making it good for arthritis and other painful diseases.

Everyone knows garlic is healthy, and garlic contains Allicin which is a powerful antibiotic which is 15 times more powerful than penicillin for killing bacteria. Chewing, chopping, and smashing a clove of garlic releases the Allicin oil for great health. At the same time garlic lowers cholesterol and boost the immune system thus helping to prevent cancer and other debilitating diseases. Take a clove of garlic and remove the skin, chop it up and take it with a little bit of honey every morning for great health and vitality.

Tomatoes also contain lots of lycopene that’s a powerful antioxidant that’s well known to prevent Breast, Prostate, and Stomach Cancer and boost your immune system. Studies show that eating tomatoes lowers your risk of prostate cancer by more than 30%. And another study shows that eating tomatoes lowered your chances of coming down with pancreatic cancer by over 40%. And low levels of lycopene have been found in people who come down with colon cancer and growths… so it’s very important to eat your tomatoes.
