Did you know that there are lots of tannins and acids in nuts and seeds that are not beneficial to your health? Soaking your nuts and seeds over night in cold water will leach away those elements that are slightly toxic… and make your grains and nuts taste milder and with less acidic and with less of an astringent taste. Walnuts have that astringent taste… and if you soak them over night in water they are very mild and still full of all the great oils that make you healthy. Almonds also benefit from being soaked in water overnight… you will notice that that water will turn a light brown color, that’s all the tannins that leached out of the almonds. If you don’t have time to plan that far ahead of time… let them soak for at least 20 minutes in nice cold water and you will see a big difference… and if nothing else wash them a few times in cold clear water. Soaking also leaches out Phytic Acid that keeps you from absorbing all the nutrients of the nuts and seeds, and soaking makes it easier to digest many of the complex proteins… Give it a try!
